The roasts controls of this machine are done manually by hitting the roast button hence giving one enough time of fixing everything and adjusting the voltage well. As much as automatic roast controls makes work easier, they may end up spoiling the roast or even the roaster incase of short circuiting. The default time for this machine is 20 with a maximum of 30 where you are expected to manually hit the roast button.

Another plus to the Nesco Coffee Roaster is the ability of the roast setting to correlate to time as it counts down while the roast progresses. In other words, a roast setting of 26 minutes, which includes the 5 minutes of cooling, produces an optimal 4 oz. That not withstanding, one can manually adjust the roast time by pressing the UP arrow while roasting is in progress.

If you want to have darker roasts while using the Nesco Coffee Roaster, you simply reduce the amount of coffee in the batch which is opposite to using air roasters where one increases the amount of coffee in the batch to get a darker roast.
